Traditionally in the heart of south-western Asturias, the best specimens of pigs have been raised among chestnut and oak groves, so it is not surprising that a delicacy such as chosco is produced in these lands.the Chosco de Tineo is a cured and smoked pork sausage made from selected cuts of pork (head of loin and tongue) marinated with salt, paprika and garlic. The casing used to cover the chosco is the blind pork, hence its rounded and irregular shape. When cut, the different pieces of meat are clearly visualised. |
